I don’t know about you, but the stress of 2020 has left me craving a bit more sugar than usual. Thankfully, these naturally sweetened wonders come together quickly and are incredibly satisfying. Tigernuts are not actually nuts at all, but small tubers that are nutty in taste and hearty in texture. They are very high in fiber, and a good source of iron. The flour can be found online (Pamela’s and Gemini are my favorite).
