This hummus is made extra satisfying by upping the tahini and using a simple method to emulsify it with the lemon and garlic before adding the chickpeas.  Make sure your tahini is fresh, and look for Soom or Sesame King brands for the best results.

The tahini sauce in this recipe can be thinned out and used as a sauce or dressing on its own.
