Alright, so I'm not saying that these are healthy, but they're a heck of a lot better than most store-bought cookies.  They're easily vegan, whole grain with the spelt flour and WAY less sweet than your average holiday indulgence.  Plus, they come together with no special equipment so you can make them with the kids (snow day activity anyone?!)  I'll take it! For thicker cookies (as pictured) chill the dough completely before baking.  For flatter cookies, only chill for about 30 minutes. We liked Califia Farms Plant Butter best, as it's free of palm oil, and Wholesome's Organic Molasses offered the perfect rich and savory punch.
